NEAL’S YARD CHEESE
AUGUST AND SEPTEMBER 2020
ISLE OF MULL CHEDDAR (minimum 150g)
Hearty, full-flavoured Scottish Cheddar, Isle of Mull is drier in texture than our other Cheddars with flavours that are upfront, richly savoury and boozy.
Made with raw cow's milk and animal rennet. Clothbound with lard.
DEVON BLUE (minimum 150g)
This cheese tends to have a sweet, caramelly flavour profile. Occasionally some cheeses will develop light spicy flavours too. It has a crumbly, buttery texture with subtle blue veining throughout. Made with pasteurised cow's milk and vegetarian rennet.
CORNISH KERN (minimum 150g)
A well-rounded cheese with good depth of flavour. Whilst not strongly acidic it has a depth arising from the 12-month maturing. The flavour is rich, nutty, savoury and smooth. Made with pasteurised cows milk and animal rennet.
RAGSTONE GOATS CHEESE (minimum 100g)
A lactic goat's cheese, with a bright acidity reminiscent of creme fraiche. The texture is smooth yet dense. Made with pasteurised goat's milk and animal rennet. May contain trace levels of cow's milk.
TUNWORTH (minimum 125g)
A Camembert-style cheese with a classically creamy and unctuous paste. Flavours are vegetal, truffley and garlicky. Made with pasteurised cow's milk and animal rennet.
